These are a labour of love but a doddle to eat. Layers of potato dauphinoise, unctuous beef from the small and flavourful Dexter cows with black truffle encased in puff pastry.
Make a small hole on the top of the pastry. Preheat the oven with a baking tray to 200 degrees and place the pithivier on the hot tray for 10-12 mins. Turn the oven down to 180 degrees for approximately 30 mins until the pithivier is golden brown and hot inside. If the pastry starts to colour before it is heated through, just drop down the oven temperature. Serve it with the beef jus that just needs a quick heating up in a pan.
